Soft & Scrumptious…just perfect


The Why…
Well, why not, of course? At this point I wanted to learn how to make a regular sourdough loaf of bread for sandwiches and toast. I wanted the size, shape, and the soft velvety consistency of a good loaf of bread. I found an enticing recipe on the Sourdough Enzo Instagram Page. She’s been my sourdough hero for a while now. If you haven’t seen her exquisite scores and her pumpkin shaped bakes, check out her site! It’s just amazing.
The first thing I noted was 250 grams of starter, in just one loaf! Wow! Well, it was amazing. Even in the fridge during the cold-proof the dough was overflowing by the next morning. I would guess this was to limit the sour nature of the bread, but I could be wrong.
