

Intro
After quite a few sourdough bakes, it was time to explore a family sandwich loaf. I recently explored the “Perfect Loaf” website. There, I found a recipe for a 100% Spelt Sandwich Loaf with 75% hydration. Spelt is one of the “ancient grains” and I’ve been curious how it would pan out in a 100% recipe.
Recipe Notes
I went into this expecting a very loose bake. However, since this was a sandwich loaf, I felt confident. I knew a loaf pan would save the day. The recipe also called for some Olive Oil and Honey. I substituted Maple Syrup for the Honey. I found some Maple Flavored Olive Oil in my Pantry to pair with it. I also topped it with Rolled Oats for added nutrition.

Summary
As I mention…delicious! I must admit, I wasn’t sure going into this as I didn’t think a 100% Spelt recipe would work. As you can see in the pictures, it came out looking very good. I sliced it thin and buttered a slice for my wife. She really liked it and went back for more. It has a taste that I’m not familiar i like it as well. It’s very high in protein and it came out soft and flavorful. Give it a try!
